Grandma's Borscht
Ingredients: 2-21/2 lbs. Pork short ribs (with bones) Large bunch fresh red beets, or 2 cans, sliced 3 potatoes, diced 2 ribs of celery, chopped 1 large onion, chopped 2 cups finely shredded white cabbage 1 one lb. can crushed tomatoes 1 fat clove garlic
Rinse meat in cold water, cover with 6 cups water (add more later if soup thickens too much) Bring to a boil and skim off excess fat Reduce to simmer and let cook for 11/2 hours or until meat is tender Add tomatoes and beet juice (from cans) and simmer for 15 minutes Add celery, garlic, onion, and potato and continue simmering for 20 minutes Add beets and cabbage Cook until "you can't stand the smell in the house" Take out meat, remove fat and bones, and cut meat into bite-sized pieces. You can chill soup before serving and remove more fat from the top.
